Roasted Cauliflower with Indian Spices (Roasted Gobhi)


                                                                   
Earlier this week my hubby was gone for Outdoor Learning Activity arranged from his office in the country renowned Pegasus Institute, two and a half hours drive away from Bangalore. The residential training was a both fun and grueling at the same time. It was completely outdoor based stay comprising of staying in tents,obstacle courses, rock climbing, raft building,rowing and carpentry etc. Also cell phone connectivity was very limited and sporadic so both of us almost remained  incommunicado for last 3 days. In the end I think the training rejuvenated him. In the meantime, I prepared this roasted cauliflower which is his favourite. Hope all of you would like it as well.


Serves: 4-5 , Roasting time: 20-30 minutes, Cooking time: 20 minutes


Ingredients:
2 medium size Cauliflowers
3 Onions
3-4 Tomatoes (ground to paste)
10-12 Garlic pods
2" inch Ginger
4-5 Green chillies
1 tsp Red chilli powder
1/2 tsp Turmeric powder
1/2 tsp Garam masala
2 tbsp chopped Green coriander
1 1/2 tbsp Cooking oil
1 1/2 tbsp Olive oil
Salt to taste


Method:
Pre-heat oven to 325 Degree Celsius. Wash cauliflower and cut it into medium size florets. Try to maintain the size of florets same. Now semi boil them in salt water for few minutes. Drain out the excess water and dry them on tissue towel.
Spread the florets in a baking tray and drizzle with 1 1/2 tbsp olive oil. Sprinkle turmeric powder, red chilli powder and stir gently to coat the spices. Roast until lightly browned and tender, stirring and turning over occasionally.This is take about 20-30 minutes.
Heat oil in a frying pan. Make a paste of onion, ginger, garlic and green chillies.Add this paste  in pan and fry till it turns light brown. Add salt, red chilli powder, garam masala and turmeric powder. Stir this for a minute and add tomato paste. Fry this masala till it leaves oil. Add chopped coriander and roasted florets. Mix gently to coat the masala on florets, add 1/2 cup of water. Cover and cook for 10-2 minutes. Turn off the heat and serve this roasted gobhi with rotis or peas pulao.
